- 2 Eggs
- 2 Corn Tortillas
- 1 cup Tomato Sauce
- ¼ cup Onion chopped
- 1 clove Garlic minced
- 1 Jalapeño sliced
- ¼ cup Cilantro chopped
- ¼ cup Cheese crumbled
- to taste Salt
- to taste Pepper
1. Heat a skillet over medium heat and warm the tortillas.
2. In the same skillet, add a bit of oil and sauté the onion, garlic, and jalapeño until softened.
3. Add the tomato sauce and let it simmer for a few minutes.
4. In another skillet, fry the eggs to your liking.
5. Place the tortillas on plates, top with the tomato sauce, and then the fried eggs.
6. Garnish with cilantro, cheese, salt, and pepper. Serve immediately.
