Tart Crust
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter cold, cut into cubes
- ¼ cup granulated sugar
- 1 egg yolk
- 2 tablespoon cold water
Filling
- 3 ripe pears peeled, cored, and sliced
- ¼ cup honey
- ¼ cup almond flour
- 1 teaspoon vanilla extract
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine flour and sugar. Add cold butter cubes and mix until the mixture resembles coarse crumbs.
Add egg yolk and cold water. Mix until the dough comes together. Press into a tart pan and refrigerate for 15 minutes.
Arrange pear slices on the crust. Drizzle honey over the pears.
In a small bowl, mix almond flour and vanilla extract. Sprinkle over the pears.
Bake for 40 minutes or until the crust is golden and the pears are tender.
Let the tart cool before serving.
