Ingredients 

Main Ingredients

  • 4 boneless, skinless chicken breasts
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved
  • 1 pound baby carrots
  • 1 red onion, cut into wedges
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix honey, Dijon mustard, olive oil, garlic powder, salt, and pepper.
  3. Place chicken breasts in a baking dish and brush with half of the honey mustard mixture.
  4. Arrange potatoes, carrots, and onion around the chicken. Drizzle with remaining honey mustard mixture.
  5. Roast in the oven for 30 minutes or until chicken is cooked through and vegetables are tender.
  6. Garnish with fresh parsley if desired.
