  • 4 pieces Chicken breasts
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 cups Mixed vegetables (carrots, bell peppers, zucchini) Chopped

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, salt, pepper, thyme, and rosemary.
  3. Rub the chicken breasts with the herb mixture.
  4. Place the chicken breasts in a baking dish and surround them with the chopped vegetables.
  5. Bake for 30 minutes or until the chicken is cooked through and the vegetables are tender.
