Ingredients

  • 1 cup butter softened
  • 1 cup sugar
  • 1 cup brown sugar packed
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 2 tablespoon instant espresso powder
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped hazelnuts toasted

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla and espresso powder.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture and mix well.
  5. Stir in the chopped hazelnuts.
  6. Drop by rounded tablespoonfuls onto the prepared baking sheet.
  7. Bake for 10-12 minutes, or until edges are golden brown. Cool on wire racks.
