- 4 cups Frozen hash browns
- 1 Onion, diced
- 1 Bell pepper, diced
- 4 Eggs
- 1 cup Shredded cheese
- to taste Salt and pepper
1. Heat a large skillet over medium heat and add a bit of oil.
2. Add the diced onion and bell pepper, cook until softened.
3. Add the frozen hash browns to the skillet, spread them out evenly.
4. Cook until the hash browns are crispy and golden brown, stirring occasionally.
5. Make four wells in the hash browns and crack an egg into each well.
6. Cover the skillet and cook until the eggs are done to your liking.
7. Sprinkle shredded cheese over the top and cover until melted.
8. Season with salt and pepper to taste. Serve hot.
