Ingredients 

Cupcakes

  • 1 cup Guinness
  • 1 cup unsalted butter melted
  • ¾ cup cocoa powder
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1.5 teaspoon baking soda
  • ¾ teaspoon salt
  • 2 large eggs
  • cup sour cream

Buttercream

  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • ¼ cup cocoa powder
  • 2 tablespoon Guinness
  • 2 tablespoon strong brewed coffee cooled

Instructions 

  1. Preheat oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a medium saucepan, heat Guinness and butter over medium heat until butter is melted. Remove from heat and whisk in cocoa powder until smooth. Let cool slightly.
  3. In a large mixing bowl, whisk together flour, sugar, baking soda, and salt. In another bowl, beat together eggs and sour cream. Add the Guinness mixture to the egg mixture and beat until combined. Gradually add the dry ingredients and mix until smooth.
  4. Divide batter evenly among cupcake liners, filling each about ⅔ full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
  5. For the buttercream, beat butter until creamy. Gradually add powdered sugar and cocoa powder, beating until smooth. Add Guinness and coffee, and beat until light and fluffy.
  6. Pipe buttercream onto cooled cupcakes and serve.
