Ingredients 

Main Ingredients

  • 2 lbs Beef Chuck cut into chunks
  • 2 tablespoon Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 can Guinness Beer
  • 2 tablespoon Tomato Paste
  • 4 large Carrots peeled and chopped
  • 4 large Potatoes peeled and chopped
  • 2 teaspoon Thyme dried
  • 2 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add beef chunks and brown on all sides.
  2. 2. Remove beef and set aside. In the same pot, add onions and garlic, cook until softened.
  3. 3. Return beef to the pot. Add beef broth, Guinness beer, and tomato paste. Stir well.
  4. 4. Add carrots, potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2 hours.
  5. 5. Serve hot and enjoy!
