Main Ingredients
- 4 fillets white fish
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded cabbage
- ½ cup chopped fresh cilantro
- 1 lime cut into wedges
Pineapple Salsa
- 1 cup diced fresh pineapple
- ¼ cup diced red onion
- 1 jalapeño seeded and diced
- ¼ cup chopped fresh cilantro
- 1 lime juice
- Salt to taste
Preheat grill to medium-high heat.
Brush fish fillets with olive oil and season with salt and pepper.
Grill fish for 3-4 minutes on each side until cooked through.
Warm tortillas on the grill for about 30 seconds on each side.
In a bowl, combine pineapple, red onion, jalapeño, cilantro, lime juice, and salt to make the salsa.
Assemble tacos by placing fish on tortillas, topping with shredded cabbage, pineapple salsa, and cilantro.
Serve with lime wedges.
