Ingredients 

Chicken

  • 4 pieces Chicken Breasts boneless, skinless
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Mango Salsa

  • 2 cups Mango diced
  • 1 cup Red Bell Pepper diced
  • ½ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 1 piece Jalapeno seeded and minced
  • 2 tablespoon Lime Juice freshly squeezed

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season with salt and pepper.
  3. Grill the chicken for 5-6 minutes on each side, or until fully cooked.
  4. In a mixing bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeno, and lime juice. Mix well.
  5. Top the grilled chicken with the mango salsa and serve immediately.
