Chicken
- 4 pieces Chicken Breasts boneless, skinless
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper freshly ground
Mango Salsa
- 2 cups Mango diced
- 1 cup Red Bell Pepper diced
- ½ cup Red Onion finely chopped
- ¼ cup Cilantro chopped
- 1 piece Jalapeno seeded and minced
- 2 tablespoon Lime Juice freshly squeezed
Preheat the grill to medium-high heat.
Brush the chicken breasts with olive oil and season with salt and pepper.
Grill the chicken for 5-6 minutes on each side, or until fully cooked.
In a mixing bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeno, and lime juice. Mix well.
Top the grilled chicken with the mango salsa and serve immediately.
