Ingredients 

Pancake Batter

  • 1 cup Greek yogurt
  • 1 cup Milk
  • 2 large Eggs
  • 2 tablespoon Lemon juice
  • 1 tablespoon Lemon zest
  • 2 tablespoon Poppy seeds
  • 1 cup All-purpose flour
  • 2 tablespoon Sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt

Instructions 

  1. In a large mixing bowl, whisk together the Greek yogurt, milk, eggs, lemon juice, and lemon zest until smooth.
  2. Add the flour, sugar, baking powder, baking soda, and salt to the wet ingredients. Stir until just combined. Do not overmix.
  3. Fold in the poppy seeds gently.
  4. Heat a griddle or non-stick skillet over medium heat. Lightly grease with butter or oil.
  5. Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  6. Serve warm with your favorite toppings.
