Ingredients 

Crust

  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup unsalted butter softened

Filling

  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup Greek yogurt
  • cup fresh lemon juice
  • 2 tablespoons lemon zest
  • ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • to taste powdered sugar for dusting

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. In a bowl, mix 1 cup flour and ¼ cup powdered sugar. Cut in butter until mixture resembles coarse crumbs. Press into prepared baking dish.
  3. Bake for 15 minutes or until lightly browned.
  4. In another bowl, whisk together granulated sugar, eggs, Greek yogurt, lemon juice, and lemon zest until smooth.
  5. Stir in ¼ cup flour and baking powder until well combined.
  6. Pour lemon mixture over the baked crust.
  7. Bake for 25 minutes or until set.
  8. Let cool completely before dusting with powdered sugar and cutting into bars.
