  • 1 cup fresh spinach chopped
  • ½ cup sun-dried tomatoes chopped
  • 4 eggs
  • 1 cup milk
  • ½ cup heavy cream
  • 1 cup goat cheese crumbled
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pie crust pre-baked

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, and heavy cream. Season with salt and black pepper.
  3. Spread the chopped spinach and sun-dried tomatoes evenly over the pre-baked pie crust.
  4. Pour the egg mixture over the spinach and sun-dried tomatoes.
  5. Sprinkle the crumbled goat cheese on top.
  6. Bake in the preheated oven for 40-45 minutes, or until the quiche is set and the top is golden brown.
  7. Let the quiche cool for a few minutes before slicing and serving.
