Goat Cheese Spinach And Sun-Dried Tomato Quiche

- 1 cup fresh spinach chopped
- ½ cup sun-dried tomatoes chopped
- 4 eggs
- 1 cup milk
- ½ cup heavy cream
- 1 cup goat cheese crumbled
- 1 pinch salt
- 1 pinch black pepper
- 1 pie crust pre-baked
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk together the eggs, milk, and heavy cream. Season with salt and black pepper.
Spread the chopped spinach and sun-dried tomatoes evenly over the pre-baked pie crust.
Pour the egg mixture over the spinach and sun-dried tomatoes.
Sprinkle the crumbled goat cheese on top.
Bake in the preheated oven for 40-45 minutes, or until the quiche is set and the top is golden brown.
Let the quiche cool for a few minutes before slicing and serving.
