Ingredients 

Main Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 ½ cups granulated sugar divided
  • 1 cup unsalted butter softened
  • 1 large egg
  • ¼ cup molasses
  • 1 teaspoon vanilla extract

Cinnamon Sugar Coating

  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt. Set aside.
  3. In a large bowl, beat 1 ½ cups sugar and butter until light and fluffy. Add egg, molasses, and vanilla extract, and beat until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a small bowl, mix ¼ cup sugar and 1 teaspoon cinnamon for the coating.
  6. Roll dough into 1-inch balls, then roll each ball in the cinnamon sugar mixture. Place on the prepared baking sheet about 2 inches apart.
  7. Bake for 8-10 minutes, or until edges are set and tops are crackled. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
