Ingredients 

Gingerbread Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, softened
  • 0.75 cup brown sugar
  • 1 unit egg
  • 0.5 cup molasses

Ice Cream

  • 1 quart vanilla ice cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, beat butter and brown sugar until fluffy. Add egg and molasses, mix well.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Roll dough into balls and place on baking sheet. Flatten slightly.
  6. Bake for 10-12 minutes. Let cool completely.
  7. Scoop ice cream onto one cookie, top with another cookie to make a sandwich. Repeat.
