Ingredients 

Cookie Dough

  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 1 egg
  • ½ cup molasses

Chocolate Filling

  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped

Instructions 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In another bowl, beat butter and brown sugar until fluffy. Add egg and molasses, mix well.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Roll dough into 1-inch balls and place on baking sheets. Flatten slightly.
  6. Bake for 8-10 minutes. Cool on wire racks.
  7. For the filling, heat cream until just boiling. Pour over chopped chocolate and stir until smooth.
  8. Spread chocolate filling on the flat side of one cookie and sandwich with another.
