Ingredients

  • 1 cup All-purpose flour
  • ½ cup Unsalted butter cold, cut into cubes
  • 2 tablespoon Granulated sugar
  • ¼ teaspoon Salt
  • ¼ cup Ice water
  • 2 cups Mixed fresh fruit sliced
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1 tablespoon Turbinado sugar for sprinkling

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, granulated sugar, and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until the dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  4. On a floured surface, roll out the dough into a 12-inch circle. Transfer to the prepared baking sheet.
  5. In a bowl, toss the sliced fruit with lemon juice and cornstarch. Arrange fruit in the center of the dough, leaving a 2-inch border.
  6. Fold the edges of the dough over the fruit, pleating as needed. Sprinkle turbinado sugar over the crust.
  7. Bake for 40 minutes or until the crust is golden and the fruit is bubbly. Cool before serving.
