  • 1 onion, diced
  • 1 cup spinach fresh or frozen

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a mixing bowl, whisk together the eggs and milk.
  3. 3. Stir in the shredded cheese, bell pepper, onion, spinach, salt, and pepper.
  4. 4. Heat an oven-safe skillet over medium heat and lightly grease it.
