Ingredients

  • 4 large flour tortillas
  • 6 eggs beaten
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup cooked breakfast sausage crumbled
  • 0.5 cup diced bell peppers optional
  • 0.5 cup diced onions optional
  • 1 tablespoon butter

Instructions 

  1. Heat the butter in a skillet over medium heat.
  2. Add the beaten eggs and cook until scrambled.
  3. Mix in the cooked sausage, bell peppers, and onions.
  4. Place a portion of the egg mixture onto each tortilla.
  5. Sprinkle with shredded cheese.
  6. Roll up the tortillas, folding in the sides as you go.
  7. Wrap each burrito in foil and place in a freezer bag.
  8. To reheat, remove foil and microwave for 1-2 minutes or until heated through.
