  • 1 cup sugar
  • 2 tablespoon cornstarch
  • 1 cup water
  • 3 cups strawberries sliced
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 1 9-inch pie crust baked

Instructions 

  1. In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly until thickened.
  2. Remove from heat and stir in strawberries and lemon juice. Let cool.
  3. In a mixing bowl, whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream into the cooled strawberry mixture.
  5. Pour the mixture into the baked pie crust. Refrigerate for at least 2 hours before serving.
