  • 4 large eggs
  • 0.25 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions 

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  3. Sprinkle feta cheese over the eggs and cook for another 1-2 minutes until the cheese starts to melt.
  4. Season with salt and pepper.
  5. Garnish with fresh parsley if desired.
