Ingredients 

For Falafel

  • 1 cup dried chickpeas soaked overnight
  • 1 small onion chopped
  • 2 cloves garlic minced
  • ¼ cup fresh parsley chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 2 tablespoon flour
  • Oil for frying

For Cucumber Sauce

  • 1 cup plain yogurt
  • ½ cucumber grated
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions 

  1. Soak chickpeas overnight in water. Drain.
  2. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, salt, baking powder, and flour. Process until mixture is coarse.
  3. Form mixture into small balls or patties.
  4. Heat oil in a deep pan. Fry falafel until golden brown, about 3-4 minutes per side.
  5. In a bowl, mix yogurt, grated cucumber, garlic, lemon juice, and salt.
  6. Serve falafel with cucumber sauce.
