  • 2 tablespoon espresso powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, espresso powder, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Drop dough by rounded tablespoonfuls onto a baking sheet.
  6. Bake for 10-12 minutes or until edges are lightly browned. Cool on wire racks.
