Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, diced
  • 1 can Black Beans, drained and rinsed
  • 1 can Corn, drained
  • 1 can Diced Tomatoes
  • 4 cups Chicken Broth
  • 2 cups Cooked Chicken, shredded
  • 2 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and diced bell pepper, cook for another 3 minutes.
  4. Stir in black beans, corn, diced tomatoes, and chicken broth.
  5. Add shredded chicken, chili powder, cumin, paprika, salt, and black pepper. Stir well.
  6. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  7. Serve hot, garnished with your favorite toppings like cheese, sour cream, or cilantro.
