Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 Bell Pepper, diced
- 1 can Black Beans, drained and rinsed
- 1 can Corn, drained
- 1 can Diced Tomatoes
- 4 cups Chicken Broth
- 2 cups Cooked Chicken, shredded
- 2 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and diced bell pepper, cook for another 3 minutes.
Stir in black beans, corn, diced tomatoes, and chicken broth.
Add shredded chicken, chili powder, cumin, paprika, salt, and black pepper. Stir well.
Bring to a boil, then reduce heat and let simmer for 20 minutes.
Serve hot, garnished with your favorite toppings like cheese, sour cream, or cilantro.
