Ingredients
Pie Crust

all-purpose flour

unsalted butter
cold, cut into cubes

ice water
Filling

elderberries
fresh or frozen

sugar

cornstarch

lemon juice
freshly squeezed
Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine flour and butter. Mix until it resembles coarse crumbs.
Add ice water gradually, mixing until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for 30 minutes.
Roll out one disc of dough and fit it into your pie dish. Set aside.
In another bowl, mix elderberries, sugar, cornstarch, and lemon juice. Pour into the pie crust.
Roll out the second disc of dough and place it over the filling. Crimp the edges to seal and cut slits for steam to escape.
Bake for 45 minutes or until the crust is golden brown and the filling is bubbly. Let cool before serving.
