Ingredients 

Cupcakes

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup eggnog

Instructions 

  1. Preheat oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, nutmeg, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. Gradually add dry ingredients to the butter mixture, alternating with eggnog, beginning and ending with dry ingredients. Mix until just combined.
  5. Divide batter evenly among cupcake liners, filling each about ⅔ full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
