  • 1 cup egg whites
  • ¼ cup diced bell peppers
  • ¼ cup diced onions
  • ¼ cup spinach, chopped
  • to taste Salt and pepper
  • Cooking spray

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Spray a muffin tin with cooking spray.
  3. In a bowl, mix egg whites, bell peppers, onions, spinach, salt, and pepper.
  4. Pour the mixture evenly into the muffin tin.
  5. Bake for 15 minutes or until the egg whites are set.
  6. Let cool slightly before removing from the tin.
