- 8 egg whites about 1 cup
- ¼ cup diced bell peppers
- ¼ cup diced onions
- ¼ cup spinach chopped
- ¼ cup shredded cheese optional
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Preheat your oven to 350°F (175°C).
Spray a muffin tin with non-stick cooking spray.
In a mixing bowl, whisk together egg whites, salt, and pepper.
Stir in bell peppers, onions, spinach, and cheese (if using).
Pour the mixture evenly into the muffin tin cups.
Bake for 20 minutes or until the egg whites are set.
Let cool slightly before removing from the muffin tin. Serve warm.
