Eclair Dough
- 1 cup water
- ½ cup butter
- 1 tablespoon sugar
- 1 cup all-purpose flour
- 4 eggs
Peanut Butter Mousse
- 1 cup heavy cream
- ½ cup peanut butter
- ¼ cup powdered sugar
Preheat oven to 400°F (200°C).
In a saucepan, bring water, butter, and sugar to a boil.
Add flour and stir until mixture forms a ball.
Remove from heat and let cool for 5 minutes.
Add eggs one at a time, beating well after each addition.
Transfer dough to a piping bag and pipe onto a baking sheet.
Bake for 20-25 minutes or until golden brown.
For the mousse, whip heavy cream until stiff peaks form.
Fold in peanut butter and powdered sugar until smooth.
Fill cooled eclairs with peanut butter mousse.
