Main Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup grated cucumber peeled and seeded
- ½ cup chopped nuts walnuts or pecans
- ½ cup vegetable oil
- 2 eggs beaten
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
Add the grated cucumber, chopped nuts, vegetable oil, beaten eggs, and vanilla extract. Stir until just combined.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
