Crustless Spinach Quiche
A simple, delicious, and healthy crustless quiche loaded with spinach and cheese.

Main Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 package frozen chopped spinach, thawed and drained (10 oz)
- 5 eggs
- 3 cups shredded cheese (cheddar, mozzarella, or a mix)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Preheat oven to 350°F (175°C).
Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft.
Stir in thawed and drained spinach. Cook until excess moisture has evaporated.
In a large mixing bowl, whisk together eggs. Add cheese, salt, and pepper. Mix well.
Add spinach mixture to the egg mixture. Stir to combine.
Pour mixture into a greased baking dish.
Bake in preheated oven for 35 minutes or until eggs have set.
Let cool for a few minutes before slicing and serving.
