Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 package frozen chopped spinach, thawed and drained (10 oz)
  • 5 eggs
  • 3 cups shredded cheese (cheddar, mozzarella, or a mix)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft.
  3. Stir in thawed and drained spinach. Cook until excess moisture has evaporated.
  4. In a large mixing bowl, whisk together eggs. Add cheese, salt, and pepper. Mix well.
  5. Add spinach mixture to the egg mixture. Stir to combine.
  6. Pour mixture into a greased baking dish.
  7. Bake in preheated oven for 35 minutes or until eggs have set.
  8. Let cool for a few minutes before slicing and serving.
