  • 2 large zucchinis cut into fries
  • 1 cup breadcrumbs panko preferred
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 large eggs beaten
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, and paprika.
  3. In another bowl, beat the eggs.
  4. Dip each zucchini fry into the beaten eggs, then coat with the breadcrumb mixture. Place on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until golden and crispy. Serve immediately.
