Creamy Tuscan Shrimp Pasta Recipe

Main Ingredients
- 12 oz shrimp, peeled and deveined
- 8 oz fettuccine pasta
- 2 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes, chopped
- 2 cups baby spinach
- to taste salt and pepper
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
3. In the same skillet, add garlic and cook until fragrant, about 1 minute.
4. Stir in heavy cream and chicken broth. Bring to a simmer.
5. Add Parmesan cheese and sun-dried tomatoes. Cook until the sauce thickens, about 3-4 minutes.
6. Stir in spinach and cook until wilted.
7. Add cooked pasta and shrimp to the skillet. Toss to coat in the sauce. Season with salt and pepper to taste.
8. Serve immediately and enjoy!
