  • 1 cup rolled oats
  • ½ cup pumpkin seeds
  • ½ cup dried cranberries
  • ¼ cup honey
  • ¼ cup peanut butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine oats, pumpkin seeds, and dried cranberries.
  3. In a small saucepan, warm the honey and peanut butter over low heat until melted and combined.
  4. Remove from heat and stir in vanilla extract and salt.
  5. Pour the honey mixture over the dry ingredients and mix well.
  6. Press the mixture into a greased or parchment-lined baking pan.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.
