Base
- 1 cup all-purpose flour
- ½ cup unsalted butter cold and cubed
- ¼ cup sugar
Filling
- 1 cup cranberries fresh or frozen
- ½ cup pecans chopped
- 1 cup brown sugar packed
- 2 tablespoon all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 large eggs beaten
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour, sugar, and cold butter cubes. Mix until crumbly. Press into a baking dish.
Bake the base for 15 minutes or until lightly golden.
In another bowl, mix cranberries, pecans, brown sugar, flour, baking powder, and salt.
Add beaten eggs and vanilla extract to the cranberry mixture. Stir well.
Pour the filling over the baked base. Spread evenly.
Bake for another 20 minutes or until set.
Let cool before cutting into bars.
