Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup orange juice freshly squeezed
  • 0.5 cup milk
  • 2 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 2 eggs large
  • 0.5 cup vegetable oil
  • 1.5 cups cranberries fresh or frozen

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine orange juice, milk, orange zest, vanilla extract, eggs, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the cranberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
