Cranberry Orange Cheesecake Bars

Crust
- 1.5 cups Graham Cracker Crumbs
- ¼ cup Sugar
- ½ cup Melted Butter
Filling
- 16 oz Cream Cheese softened
- 1 cup Sugar
- 3 Eggs
- 1 teaspoon Vanilla Extract
- 1 tablespoon Orange Zest
Topping
- 1.5 cups Cranberries fresh or frozen
- ½ cup Sugar
- ¼ cup Orange Juice freshly squeezed
Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan.
In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and orange zest.
Pour cream cheese mixture over the crust. Bake for 30 minutes or until set. Let cool.
In a saucepan, combine cranberries, sugar, and orange juice. Cook over medium heat until cranberries pop and mixture thickens. Let cool slightly.
Spread cranberry mixture over the cooled cheesecake. Refrigerate for at least 2 hours before cutting into bars.
