Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and vanilla extract. Gradually add to the dry ingredients, mixing until combined. Fold in the cranberries.
  4. Divide the dough in half. Shape each half into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet.
  5. Bake for 25 minutes, or until the logs are golden brown. Remove from the oven and let cool for 10 minutes.
  6. Reduce the oven temperature to 275°F (135°C). Slice the logs diagonally into ½-inch thick slices. Place the slices cut side down on the baking sheet.
  7. Bake for an additional 20 minutes, turning the slices halfway through, until crisp and golden. Let cool completely before serving.
