- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries coarsely chopped
- 1 cup apple peeled, cored, and diced
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the chopped cranberries and diced apple.
Divide the batter evenly among the muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
