Ingredients

  • 1 cup Cottage Cheese
  • 3 Eggs
  • ½ cup All-purpose Flour
  • ¼ teaspoon Salt
  • ½ teaspoon Baking Powder
  • 1 tablespoon Sugar
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Butter for cooking

Instructions 

  1. In a mixing bowl, whisk together the cottage cheese and eggs until well combined.
  2. Add the flour, salt, baking powder, sugar, and vanilla extract to the bowl. Mix until just combined.
  3. Heat a frying pan over medium heat and add a bit of butter.
  4. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Repeat with the remaining batter, adding more butter as needed.
  6. Serve warm with your favorite toppings.
