Ingredients

  • 1 cup Corn fresh or frozen
  • 1 cup Black Beans rinsed and drained
  • 1 Avocado diced
  • 1 Tomato diced
  • ¼ cup Red Onion finely chopped
  • 1 Jalapeño seeded and minced
  • 2 tablespoon Cilantro chopped
  • 1 Lime juiced
  • ½ teaspoon Salt

Instructions 

  1. In a large mixing bowl, combine the corn, black beans, avocado, tomato, red onion, jalapeño, and cilantro.
  2. Squeeze the lime juice over the mixture and add salt to taste.
  3. Gently toss everything together until well combined.
  4. Serve immediately or refrigerate for later.
