Ingredients 

Cookies

  • 1 cup Butter softened
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar packed
  • 2 Eggs large
  • 2 teaspoon Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 2 cups Chocolate Chips

Ice Cream

  • 1 quart Ice Cream any flavor

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually blend into the creamed mixture. Stir in the chocolate chips.
  5. Drop dough by rounded tablespoonfuls onto the prepared baking sheet. Bake for 10-12 minutes, or until edges are golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  6. Once cookies are completely cool, take a scoop of ice cream and place it between two cookies. Press gently to spread the ice cream evenly. Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
