Cookie Dough Ice Cream Sandwich Recipe

Cookie Dough
- 1 cup Butter softened
- 1 cup Brown sugar
- ½ cup Granulated sugar
- 2 teaspoon Vanilla extract
- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 2 cups Chocolate chips
Ice Cream
- 1 quart Vanilla ice cream softened
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the vanilla extract.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
Stir in the chocolate chips.
Drop dough by rounded tablespoonfuls onto the prepared baking sheet. Flatten slightly with your hand.
Bake for 10-12 minutes, or until edges are golden brown. Let cool completely.
Scoop softened ice cream onto the flat side of one cookie. Top with another cookie to make a sandwich. Repeat with remaining cookies and ice cream.
Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
