Ingredients

  • ½ cup small tapioca pearls
  • 2 cups coconut milk
  • ½ cup sugar
  • 1 pinch salt
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. Soak the tapioca pearls in water for about 30 minutes. Drain and set aside.
  2. 2. In a saucepan, combine the coconut milk, sugar, and salt. Bring to a simmer over medium heat.
  3. 3. Add the soaked tapioca pearls to the saucepan. Cook, stirring frequently, until the tapioca is translucent and the mixture has thickened, about 15-20 minutes.
  4. 4. Remove from heat and stir in the vanilla extract.
  5. 5. Let the pudding cool slightly before serving. It can be served warm or chilled.
