Main Ingredients
- 1 lb Shrimp, peeled and deveined
- ½ cup All-purpose flour
- ½ teaspoon Salt
- ½ teaspoon Black pepper
- 2 pcs Eggs beaten
- 1 cup Shredded coconut
- ½ cup Panko breadcrumbs
- 1 cup Vegetable oil for frying
1. In a shallow bowl, mix flour, salt, and pepper.
2. In another bowl, beat the eggs.
3. In a third bowl, combine shredded coconut and panko breadcrumbs.
4. Dredge shrimp in the flour mixture, then dip in beaten eggs, and coat with coconut mixture.
5. Heat oil in a frying pan over medium heat. Fry shrimp in batches until golden brown, about 2-3 minutes per side.
6. Drain on paper towels and serve warm.
