  • 3 cups sweetened shredded coconut
  • cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites room temperature
  • ¼ teaspoon salt

Instructions 

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract.
  3. In a separate bowl, beat egg whites and salt until stiff peaks form.
  4. Gently fold the egg whites into the coconut mixture.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Bake for 20 minutes or until the edges are golden brown.
  7. Allow macaroons to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
