Coconut Lime Tart

Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.5 cups Shredded coconut toasted
  • 0.5 cups Butter melted

Filling

  • 1 can Sweetened condensed milk 14 oz
  • 4 Egg yolks
  • 0.5 cups Lime juice freshly squeezed
  • 1 tablespoon Lime zest grated

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, toasted coconut, and melted butter. Press mixture into a tart pan to form the crust.
  3. Bake the crust for 10 minutes. Remove from oven and let it cool.
  4. In another bowl, whisk together sweetened condensed milk, egg yolks, lime juice, and lime zest until smooth.
  5. Pour the filling into the cooled crust. Bake for 20 minutes or until set.
  6. Let the tart cool to room temperature, then refrigerate for at least 2 hours before serving.
