- 1 cup Coconut milk
- ¼ cup Chia seeds
- 2 tablespoon Maple syrup
- 1 teaspoon Vanilla extract
- 1 tablespoon Lime zest
In a mixing bowl, whisk together coconut milk, chia seeds, maple syrup, vanilla extract, and lime zest.
Let the mixture sit for about 10 minutes, then whisk again to prevent clumping.
Cover the bowl and refrigerate for at least 4 hours or overnight.
Stir the pudding before serving. Garnish with extra lime zest or coconut flakes if desired.
