Ingredients

  • 2 cups coconut milk
  • ½ cup sugar
  • cup cocoa powder
  • 3 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions 

  1. In a saucepan, combine coconut milk, sugar, cocoa powder, cornstarch, and salt. Whisk until smooth.
  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.
  3. Remove from heat and stir in vanilla extract.
  4. Pour the pudding into serving glasses and let cool to room temperature. Refrigerate for at least 2 hours before serving.
