  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1 cup cashews, chopped
  • ½ cup honey
  • ¼ cup coconut oil
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. In a large bowl, mix oats, shredded coconut, and chopped cashews.
  3. In a small saucepan, combine honey, coconut oil, brown sugar, vanilla extract, and salt. Heat until melted and smooth.
  4. Pour the liquid mixture over the dry ingredients and mix well.
  5. Press the mixture firmly into the prepared baking dish.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let cool completely before cutting into bars.
